Super Nuts Butter

Buying nut butters, particularly good quality almond butters can cost an arm and a leg. There are a load of great quality peanut butters available these days, and there is almost always one on special. I pick up the best-priced jar that contains just peanuts, and then turn it into a super spread for a fraction of the cost.  

INGREDIENTS

  • 50 g sesame seeds 

  • 150 g roasted almonds 

  • 50 g raw macadamias

  • 50 g raw cashews

  • 50 g Brazil nuts 

  • 375 g good quality peanut butter 

  • ½ teaspoon sea salt

  • 2 tablespoons (20 g) hemp seeds

  • 2 teaspoons white chia seeds

METHOD

  1. Put the sesame seeds in a large cold frying pan over medium heat and stir for 5 minutes or until deep golden. Transfer to a bowl and set aside.

  2. Put the almonds, macadamias, cashews and Brazil nuts into a food processor and process until the mixture starts to stick together up the sides. Add the peanut butter, half the sesame seeds and salt, then continue to process until the mixture is thinner and the oils have released from the nuts. Add the remaining ingredients and pulse until just combined. Transfer to a dry, sterilised jar. Allow the mixture to cool completely before sealing with a lid to prevent any condensation or moisture in the jar. 

  3. Alternatively, you can use store-bought sesame seeds but the flavour and texture is unmatched to freshly toasted seeds.
